There’s nothing better than a nice bowl of hot soup in the winter. This soup is quick (thank you Ninja Foodi Pressure Cooker), easy, and kid friendly!

Ingredients

  • Beef Stew Meat – 1 lb.
  • Salt – 1/2 tsp.
  • Pepper – 1/2 tsp.
  • Olive Oil – 2 tbsp.
  • Yellow Onion – sliced
  • Garlic – 2 cloves – minced
  • Carrots – 4 chopped
  • Diced Tomatoes – 14.5 oz can
  • Beef Broth – 32 oz.
  • Basil – 2 tsp.
  • Fresh Spinach – 2-3 oz.
  • Medium Pasta Shells – 16 oz.

Instructions

This past fall, I decided to purchase the Ninja Foodi 8-qt. 9-in-1 Deluxe XL Pressure Cooker & Air Fryer. It is now my all time favorite appliance (Blog post on WHY coming soon), and I used it to quickly whip up this soup.

  1. Season stew meat with salt and pepper.
  2. Set function on pressure cooker to Sauté
  3. Add oil, onion, garlic, and seasoned beef.
  4. Sauté for 5-7 minutes (beef does not need to be cooked thoroughly by the end of this step).
  5. Add carrots, diced tomatoes, beef broth, and basil to the pressure cooker.
  6. Secure pressure cooking lid, and make sure the vent is set to the seal position.
  7. Set function on pressure cooker to Pressure, set temperature to High, and set timer to 20 Minutes.
  8. Once cooking is complete, open steam valve to allow for quick release. (Use caution while opening valve to prevent burns. Additionally, the metal on the pressure cooker cover will be HOT!)
  9. Remove pressure cooking lid and add pasta shells and spinach. Let everything sit for approximately 8-10 minuets to allow the pasta to cook.
  10. Enjoy!
